Arabian chicken mandi
Ingredients
Chicken thigh piece 3
Rice half kg
Cloves few
Cinnamon stick 2
Cumin seeds 1 tablespoon
Yougurt 1 cup
Salt to taste
Sliced onion 1
Red chilli powder
Red chilli flakes
Salt
Lemon juice 2 tablespoon
Mandi masala
Dry coriander 2 tablespoon
Fennel seeds 2 tablespoon
Green cardamons 2
Cinnamon stick 2
Anis flower (badyan ka phool) 1
Black pepper 2 tablespoon
Mace 1 teaspoon
Cumin seeds 2 tablespoon
. Dry roast all these things in a pan and grind it after getting cool.
Method
First of all in a bowl add 4 tablespoons of mandi masala and add red chilli powder, red chilli flakes ,salt , yougurt and lemon juice.mix it well
Now apply this masala on chicken and leave overnight or atleast 6 hours.
After marinating steam the chicken properly and shallow fry in a pan for color.
Now heat the oil and fry the sliced onion till light brown and add cloves, cumin seeds, cinnamon sticks, salt and yougurt.
Add water according to rice and let it cook until the water gets dry.
When its done add chicken in it and give the smoke of coal.
Your mandi rice is ready enjoy it.
Note.Basic mandi recipe being make in Saudia they make it in the dig hole with coals we tried to make it at home hope you enjoy it.
